For the past thirteen Fridays you've had a fitness related post from me - well this week, we're talking baking. Today I'm sharing a recipe for cinnamon and sultana scones. MAKES: 8-16 PREP TIME: 30 MINUTES BAKE TIME: 8-10 MINUTES
THE SCONES
Preheat the oven to 220⁰C, fan 200⁰C, Gas Mark 7
Grease two baking trays with butter or line with non-stick paper
Combine the flour and baking powder in a large bowl
Add the butter by hand until it becomes a breadcrumb consistency by rubbing ingredients together
Stir in the sugar, cinnamon and sultanas
Whisk the egg in a measuring jug and add the milk to bring the mixture up to 100ml.
Save a small amount of this mixture to one side (approx. 1 tbsp.)
Add the egg mixture to the dry ingredients gradually, stirring inbetween.
Add small amounts of milk until the mixture is a sticky dough.
Sprinkle a light amount of flour onto your work surface and roll out the dough to a thickness of around 2cm.
Using a cutter, cut the dough out into circles. Depending on the size of your cutter, depends how many scones you'll make.
Lightly brush the scones with the egg mixture you set aside.
Cook for 8-10 minutes.
To serve, you could use, butter, cream and jam....anything you'd like but remember you've got that cinnamon flavouring in there!
