Recipe: 'On the Go' Breakfast Muffins


I'm one of these people that would easily skip breakfast if it meant an extra ten minutes asleep in bed. Not a good thing to do I know, but breakfast on the go is something I do far to regularly. Instead of grabbing something very unhealthy, that doesn't set me up for the day, I thought I'd look online for a recipe that satisfies my sweet tooth without being completely disastrous for my diet. I came across a healthy breakfast muffin recipe, had a go and here we are today. This is perfect for on the go mornings to grab and take with you! Enjoy!

MAKES: 12           PREP TIME: 30 MINUTES         COOK TIME: 25 MINUTES

 


THE MUFFINS

Preheat the oven to 200⁰C, fan 180⁰C, Gas Mark 6
In a large mixing bowl, combine the dry ingredients (plain flour, wholemeal flour, oats, brown sugar, salt, baking powder and cinnamon)
Make a well in the middle of the dry ingredients
Add the mashed bananas, egg yolks, milk and sunflower oil
Mix gently with a wooden spoon until a wet batter forms - don't over mix!
In a small bowl whisk the egg whites until soft peaks form
Fold in the egg whites into the batter mixture - make sure they are well combined throughout the mixture
Add the fruit (if you wish to use something other than blueberries/currents you can)
Divide the mixture evenly between 12 muffin cases - I had some left over blueberries so drop a few on top to decorate
Bake in the oven for 25 minutes until the tops are golden brown


These muffins can keep for 4-5 days in an airtight container. They also freeze really easily - leave to thaw for one hour then heat in the oven for 10 minutes to have it warm!
 
 
These taste so yummy! They have more of a bready texture than a cake texture to them however they are super light - ideal for breakfast!
The whole house smelt amazing as well when I was making them.
These will definitely become a favourite!
